Roasted Corn Salsa

ingredients

  • 3-4 ears of corn
  • 1 can of black beans
  • 1 large tomato
  • 1 clove of garlic
  • 1/4 cup of red onion
  • 1 jalapeno pepper
  • 1/4 cup of cilantro
  • 1 lime juiced
  • 2 teaspoons of cumin
  • salt and pepper to taste

directions

Grill the corn on the grill and allow to cool. Drain and rinse black beans and empty into a large bowl. Chop tomato, garlic, red onion, jalapeno pepper, and cilantro. Add to the black beans. When corn is cool, cut the corn off the cob and add to bowl. Add lime juice, cumin, salt, and pepper. Stir and enjoy with tortilla chips.
