SALMON OR TUNA PIE
This has always been a favorite Passover recipe.
ingredients
- 6 oz. pkg. potato pancake mix
- 1/4 c. oil
- 3 cans salmon or tuna (7 oz. size), drained
- 1 stalk celery, chopped
- 1 large carrot, grated
- 1/4 tsp Mrs. Dash
- 1/3 c. grated cheese (optional)

Prepare potato pancake mix as directed on package

When thickened, stir in oil, celery, carrot, spices and salmon or tuna

Spread evenly in greased 9“ square or 10” round pyrex dish
- 4
Sprinkle with grated cheese, if desired

Bake at 350 F for 30 minutes, uncovered

For crispier top, broil for 2 minutes

Additions: chopped red or yellow peppers, slivered almonds for crunch

Serve with side salad for a quick and easy lunch
