Pork and Black Bean Skillet
sometimes called “porn skillet”, this dish is sinfully tasty!
ingredients
- 1 to 1.5 lbs boneless pork loin chops
- 1.5 Tbs ground cumin
- 1.5 tsp chili powder
- 1.5 tsp garlic salt
- 1.5 tsp paprika
- 2 cans mild Rotel
- 1 can black beans, rinse, drain
- 1 can corn, drain
- 1 Tb vegetable oil
- 1 small red onion, diced
- 1 C uncooked instant rice
- 1 C shredded cheddar
- 2 Tbs fresh cilantro
- lime wedges, tortillas

Cut pork into 1.5" cubes. Cook rice and set aside.

Combine cumin, chili powder, garlic salt & paprika in large (gallon) Ziploc bag. Remove 2 tsp. of the mixture and put in large bowl. Add pork to Ziploc. Seal and shake to coat. Set aside.

To the large bowl with cumin mixture, add Rotel, Black beans (drained) and corn (drained).

Heat oil in large skillet with lid over med-hi heat. Add pork and red onion. Saute 6-8 minutes or until pork is browned. Stir in tomato mixture. Bring to a boil and stir in rice. Cover and remove from heat. Let stand 5 min.

Sprinkle with cheddar and cilantro. Serve with tortillas and lime wedges
