Spinach Salad with Basil Dressing

ingredients

  • Enough fresh spinach to fill a big bowl
  • 1 small avocado, cubed
  • 3 green onions sliced thin
  • 4 ounces feta cheese (crumbled)
  • 1/2 cup walnuts or pecans chopped or pine nuts
  • Dressing (make in blender)
  • 2 large garlic cloves m minced
  • 1/2 cup fresh basil leaves
  • 1/4 cup red wine vinegar
  • 2 tsp sugar
  • 1/2 cup olive oil
  • 1/2 tsp fresh ground pepper

directions

Toss salad with dressing and serve immediately (wilts fast)
