ingredients

  • 3 large eggs, beaten
  • 1 1/2 cups low fat milk
  • one half of a 15 3/4 ounce can sweet potatoes, drained and mashed (about 1/2 a cup)
  • 1 Tbs canola oil
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1/2 cup walnuts, finely chopped
  • 2 tsp baking powder
  • 3/4 tsp ground cinnamon
  • 1/4 tsp salt

    1. Preheat the waffle iron according to the manufacturer’s instructions.

    2. Whisk together the eggs and milk in a medium bowl. Add the sweet potatoes, canola oil and vanilla and stir to combine.

    3. Combine the flours, walnuts, b. powder, cinnamon and salt in a large bowl.

    4. Add the egg mixture to the dry ingredients and stir until just moistened.

    5. Coat the hot waffle iron w/ nonstick cooking spray. Pour the batter onto the hot waffle iron, to cover about 2/3rds of the grid surface. Cook according to instructions. The waffles may need to cook an additional minute due to the sweet potatoes. Repeat with the remaining batter.

    6. Serve hot w/ maple syrup.

notes

I used fresh sweet potato, wrapped them in tin foil and stuck them in the slow cooker for 4 hours on high.
