Salisbury Steaks with Gravy
Hearty would be an understatement !
ingredients
- Salisbury Steaks:
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1 TBSP worcestershire sauce
- 1 tsp salt
- 1/2 tsp pepper
- 1 1/2 pounds ground sirloin (90% lean)
- flour
- Gravy:
- 2 TBSP butter
- 1 small onion chopped
- 1 carrot, chopped in small dice
- 1 stalk celery, chopped in small dice
- 2 TBSP flour
- s cups low sodium beef broth
- 1/4 tsp salt
- 1/4 tsp pepper

For the beef: In a medium bowl combine onion, garlic, bread crumbs, milk, worcestershire sauce, salt and pepper. Add ground sirloin and mix well. Form into 4 oval patties - about 4 1/2 inches long, 3 inches wide and 1 inch thick. Place flour on plate. Dredge ovals in flour, shaking off excess. Broil in a preheated oven until browned on each side - about 8 minutes for rare. I do five minutes on each side.

For gravy:(make this first - then cook the meat)

In saute pan, melt butter. Add onion, carrot and celery. Stirring occasionally until veggies are tender. Sprinkle on flour and cook for about 2-3 minutes until flour is lightly browned. Stir in beef broth and salt and pepper. Bring to boil then reduce heat to low and simmer until thickened, about 20 minutes.
