Sherried Chiecken Divan
ingredients
- 4 Chicken Breasts
- 1 1/2 lbs. broccoli florets
- 1/2 c. butter
- 1/4 c. flour
- 1 c. cream
- 3 T. Sherry
- 1 t. salt
- dash pepper
- 1/4 c. + 2 T. Parmesan
- 2 c. broth

Boil chicken breasts with salt, onion, celery and carrots. Reserve 2 c. broth. Cut chicken into bite size pieces.

Steam broccoli.

Melt butter. STir in flour, cook until smooth. Stir in broth, cream and sherry. Cook over med. heat until thick and bublby. Stir in salt and pepper. Remove from heat.

Place broccoli in greased 13 X 9 casserole dish. Top with half of sauce. Place chicken in dish. Stir 1/4 c. parmesan into remaining sauce, pour over chicken. Sprinkle 2 T. parmesan on top. Bake @ 350° for 25 minutes. Broil 2 minutes, brown slightly. Serve over rice.
