Vic's Roasted Chickpeas
Indian Spiced Little Balls of Protein. Great snack.
ingredients
- 2 cups canned chickpeas, rinsed and drained
- 1 tbs lemon juice
- 1 tbs olive oil
- 1 tsp brown sugar
- 1.5 tsp ground cumin
- .5 tsp ground coriander
- .25 tsp ground cinnamon
- Black Pepper and Cayenne Pepper to taste
- .25 tsp salt
directions
Preheat oven to 425 F. Combine chickpeas, lemon juice, olive oil, sugar, spices and salt in a large bowl; toss well. Spread on a foil-lined baking sheet and roast, tossing halfway through, for 20-25 minutes, or until the chickpeas are dark brown in spots. Let cool. Can be kept in air tight container in the refrigerator for up to 4 days. Snack away!

I like mine super crunchy and spicy, so I add lots of cayenne and bake until my crunch level is reached.
