Mango Upside Down Cake
If you love mangoes - you’ll love this cake.
ingredients
- 1 box yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 4 TBSP unsalted butter, melted
- 1 cup dark brown sugar
- 5 ripe mangoes, peeled and cut into one inch cubes
directions
Preheat oven to 350 degrees. Grease 10x10 inch baking pan. In a large mixing bowl, combine cake mix, eggs and oil, along with the amount of water called for by the cake mix directions Beat until well combined. Pour butter into the bottom of the prepared pan and sprinkle evenly with the dark brown sugar. Spread the mangoes evenly over the sugar, then pour the cake batter over the mangoes. Place in oven and bake until a toothpick inserted into center of cake comes out clean about 45 minutes. Let cool 15 minutes. Unmold onto a serving dish with a lip to contain any juices.

I make one of these every mango season. I can only make one cause our mango tree yields only about five mangoes each year !!!
