Mom's Madras Shrimp
I made this often when Daddy and I were first married. I made extra and froze it. I think I’ll make it again soon.
ingredients
- 2 quart casserole
- 1/2 cup olive oil
- 2 cups onions, finely chopped
- 2 cups green pepper, finely chopped
- 1 lb can plum tomatoes with basil
- 1 cup tomato puree
- 1/4 teaspoon cayenne
- 1 clove garlic, finely chopped
- 2 bay leaves
- 2 T curry powder
- Chicken stock
- 3 lbs cooked shrimp
directions
Heat oil in a 2 quart casserole. Add onions, garlic, green pepper and cook until soft. Add tomatoes, tomato puree and spices. Boil and stir and add curry powder. Simmer covered 20 minutes. If too thick add chicken stock or water. Serve
