White Chicken Chili
ingredients
- 4 Chicken breasts (chopped)
- 1 cup chopped white or yellow onion
- 2 cloves garlic
- 1 1/2 tsp lemon pepper
- 2 cans or corn (not drained)
- 2 small cans diced green chiles
- 2 cans white beans (not drained)
- 2 tsp ground cumin
- 3 tbsp lime juice
- 2 1/2 cups chicken broth (or 2 cans)
- 1 cup sour cream
- 1 tsp oregano
- Monterey Jack Cheese for topping

Saute cubed chicken in large soup pot with oil, onion, and garlic and seasonings.

Once chicken is cooked through add corn and beans, keeping juices from one can of each.

Add remaining ingredients except cheese. If and when more liquid is needed add the juice from the corn and bean cans.

Simmer soup on stove until heated through and ready to eat. Top with shredded cheese.

This soup can be ready quickly or can simmer a long time on the stove. Either way it's really tasty and makes great leftovers!
