Mashed Potatoes

ingredients

  • 3 pounds white boiling potatoes, peeled and quartered
  • 1 stick unsalted butter
  • 1 cup whole milk
  • Kosher salt
  • 1/2 cup shredded cheddar cheese (if you like it!)
  • 1/2 teaspoon freshly ground black pepper

directions

    Cook the potatoes in a large pot of salted water for 15 – 20 minutes or until very tender.

    Meanwhile heat the butter and milk in a small pot.

    Drain the potatoes. Mix them while slowly adding the milk and butter mixture.

    If using the cheese you can add that now too.

    With an electric mixer mix the potatoes on low

You can do the same with sweet potatoes, but use orange juice instead of milk. It is very sweet and yummy!
