GRANDMA LONG'S FAVORITE SQUASH CASSEROLE

ingredients

  • 4 cups yellow squash (cubed)
  • 2 T grated onion
  • 1/3 cup shredded carrot
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • Pepper to taste
  • 1 box of Pepperidge Farm Cornbread Stuffing Mix (Prepare as normal.)

    Cook squash in 1 1/2 cups of water to which 3/4 t salt has been added. Cook for 10 minutes.

    Drain and add next 5 ingredients.

    Butter a baking dish and put 1/2 the stuffing in the bottom of the dish. Add squash mixture. Top with remaining stuffing. Sprinkle with sliced almonds if desired.

Grandma always made this in the summer when squash was plentiful in her garden. I do the same. I hope you enjoy it as much as Grandma did.
