Middle eastern dish, very healthy, great as appetizer

ingredients

  • 2c. plain yogurt (greek is best)
  • 2 lrg cucumbers
  • 1/2 tsp salt
  • 5 cloves garlic
  • 2-3 Tblsp white wine vinegar
  • 1/3 c. toasted walnuts
  • 3 Tblsps olive oil
  • 1 Tblsp dill or mint

directions

Drain yogurt overnight in cheesecloth or strainer to make yogurt cheese. Cut cucumbers very small leaving some of the skin on and put in large strainer sprinkling some salt to drain some of the water. Use garlic press to add garlic. Mix all ingredients together and serve with toasty pita slices or other crackly type cracker.
