Portabella Mushroom Sandwich

A great burger substitute

ingredients

  • Portabella Mushroom
  • Whole grain bread
  • Extra Virgin Olive Oil
  • Champagne (or other) vinegar
  • Whatever toppings you choose (ideas: tomatoes, avacado, sprouts, lettuce, cheese, onion, spinach)

    Fry Mushroom in small frying pan using a small amount of EVOO (never use more than a Tbs). Flip occasionally, total frying time should be about 7 minutes. For the last 2 minutes, pour vinegar over the mushroom, continuing to flip.

    Serve on toasted whole grain bread with your choice of toppings. No sauce is needed because of the strong vinegar taste (although a little hummus would be ok). Cheese or avadaco adds filling protein and fat to the sandwich, but make sure to only use one serving of cheese. Try to use at least one green vegatable as a topping, like fresh spinach.
