FAJITAS
Fajitas have always been one of our favorite dishes to make. I make them less often now, and prefer to use my own marinade like here.
ingredients
- 1/4 cup fresh lime juice
- 1/4 cup tequila
- 4 cloves garlic, chopped
- 2 TBS vegetable oil
- 2 tsp Worcestershire sauce
- 1 tsp dried crushed Mexican oregano
- 1 tsp red pepper flakes
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 lbs flank steak
- 2 tsp salt, 1 tsp pepper
- 6 flour tortillas
- 1 red pepper, 1 green pepper, sliced lengthwise
- 1 large onions in rings
- 1 TBS minced garlic
- Lime wedges

Marinade: Whisk together lime juice, tequila, garlic, 1/2 the oil, worchestershire, oregano, pepper flakes, cumin and coriander. Seal in a ziplock bag or Tupperware, marinating for 12-24 hours, turning occasionally.

Remove meat from bag, add salt and 1/2 the pepper. Preheat grill to high, and oven to 325. Warm tortillas in foil in the oven for 15 minutes. Cook steak 3-4 minutes per side for med rare. Let rest 10 minutes before slicing. Heat remaining oil in skilled. Cook pepper and onions, add 2nd garlic, rest of salt and pepper.

Roll up with cheese, sour cream, or guacamole and enjoy!
