Brazilian Black Beans
ingredients
- 1/2 lb. dried black beans
- 4 cups water
- 1 medium onion, studded with 4 cloves
- 1 clove garlic
- 1/2 tsp. thyme, crumbled
- 1 lg.onion chopped
- 3 cups cooked rice
- orange slices
- tomato-salsa
- sour cream
- 1 bell-pepper, diced
- 2 tbsp. oil
- 2 medium tomatoes chopped
- 1 small garlic clove

Bring and water to boil, lower heat and simmer for two minutes. Remove from heat, let stand for 1 hour.

Add salt, clove-studded onion and garlic. Simmer for 1 hour or until beans are almost tender. Add thyme and oregano and cook 30 minutes or until beans are tender.

Saute’ onion, pepper, and garlic in oil. Add beans with liquid and tomatoes. Cook, stirring occasionally until beans are soft.

Remove 1 cup bean mix and mash with fork. Return to skillet until sauce thickens slightly. Add back to original bean mixture.

spoon rice onto warm serving platter. Top with black beans and tomato-salsa. garnish with orange slices. serve with sour-cream and corn bread
