Baked Corn Casserole
ingredients
- 1 lb. bacon,cooked crisp and chopped
- 1/2 cup butter
- 1/2 medium onion, chopped
- 1/2 cup celery,chopped
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1/4 cup flour
- 2 cups sour cream
- 2 lbs. fresh corn kernels(or use 1 lb. frozen sweet corn,plus 1 lb. frozen shoe-peg corn,thawed)
- salt and pepper to taste
- 1-2 tablespoons chopped fresh parsley

Preheat oven to 350 degrees. Cook the bacon, then chop and set aside. Melt the butter in a large pot over medium heat. Saute the onion, celery and peppers until soft. Stir in flour, then the sour cream until well combined. Add the corn,half the parsley, and most of the bacon; salt and pepper to taste. Pour the mixture into a 9 x 13 baking dish and sprinkle with the remaining bacon and parsley.

Bake for 30-45 minutes, or until lightly browned.
