Spinach and Potato Frittata
ingredients
- 2 Tablespoons Olive Oil
- 6 Small Red Potatoes, sliced
- 1 Cup Torn Fresh Spinach
- 2 Tablespoons Sliced Green Onions
- 1 Teaspoon Crushed Garlic
- 6 Eggs
- 1/3 Cup Milk
- 1/2 Cup Shredded Cheddar Cheese
- Salt and Pepper to taste

1. Heat olive oil in a medium sized skillet over medium heat.

2. Place sliced potatoes in the skillet and cover while allowing to cook about 10 minutes or until tender but firm.

3. Mix in spinach, green onions, and garlic and season with salt and pepper.

4. Continue cooking 1 to 2 minutes, or until spinach is wilted.

5. In a medium bowl, beat together eggs and milk.

6. Pour the mixture into the skillet over the vegetables.

7. Sprinkle with cheese.

8. Reduce heat to low, cover, and cook 5 to 7 minutes, or until eggs are firm.
