ingredients

  • 3 eggs
  • 1 cup of sugar
  • 1 teaspoon lemon juice
  • 2/3 cup pumpkin
  • 3/4 cup of flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • small bag of crushed pecan pieces
  • 8oz cream cheese (room temperature)
  • 3 tablespoons margarine
  • 1 cup powdered sugar
  • 1 teaspoon vanilla flavor

    Beat the eggs, sugar, and lemon juice together for 2 minutes. Stir in 2/3 cup of pumpkin, 3/4 cup flour, 1 teaspoon baking soda, 1 teaspoon salt, and 1 teaspoon cinnamon. Beat for 1 minute

    Spray shallow cookie sheet with non-stick spray. Place wax sheet on top of cookie sheet. Pour in batter, sprinkling pecan pieces on it. Bake for 15 minutes at 375 degrees.

    Get a dish towel and sprinkle powdered sugar on it. Flip cake over onto towel, removing wax paper from cake. Trim edges of cake to fit onto towel. Roll cake long ways up into towel. Cool for 1 hour.

    Mix cream cheese, margarine, 1 cup powdered sugar, and vanilla and beat well until even.

    Unroll towel and spread with cream cheese mix. Roll back up, wrap in aluminum foil, and place in freezer for 1 hour.
