ingredients

  • 1/4 cup Olive Oil
  • 1 pounds Boneless Turkey -- Cut To Bite Size
  • 8 clove Garlic -- Minced
  • 1 Onion -- Chopped
  • 16 ounce Diced Tomatoes
  • 2 cup Red Potatoes -- Diced
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Dried Tarragon
  • 1 teaspoon Dried Basil
  • 1 Bay Leaf

directions

Gently warm olive oil in a skillet. Sauté turkey with garlic and onions for about 5 minutes, stirring occasionally. Add remaining ingredients and cover. Simmer for 20 minutes, or until the potatoes are tender.
