Fragrant Dry Spice Rub

ingredients
- 1 Tbs. fennel seeds
- 1 Tbs. cumin seeds
- 1 Tbs. coriander seeds
- 1 1/2 tsp. dry mustard
- 1 1/2 tsp. light brown sugar
- 3/4 tsp. ground cinnamon
- 1/4 tsp. ground black pepper
- 2 Tbs. olive oil (for rubbing on pork before applying spice rub)

1. Toast fennel, cumin and coriander in small skillet over medium heat, shaking pan occasionally to prevent burning, until fragrant (about 3-5 min).

2. Cool to room temperature.

3. Mix with remaining ingredients (except oil) and grind to powder in spice grinder.
