Sausage Quiche
I originally found this in the New York Times Weekend Cookbook. It is equally good for brunch, lunch or a light supper!
ingredients
- 1 pound pork sausage
- 1 small onion, chopped finely
- 1/2 lb grated swiss cheese
- 1 T flour
- 1 tsp salt
- 1/4 tsp black pepper
- 2 T dried parsley
- 1/2 tsp dried sage
- 1 1/2 cup light cream
- 4 eggs, lightly beaten
- 1 unbaked 9" pie crust

Preheat oven to 375 degrees.

Cook sausage untilbrown and crumbly. Drain on paper towels. Heat 2T of the drippings and saute the onions. Set aside.

Place cheese in a bowl, sprinkle with flour and toss.

sprinkle sausage over pie shell, reserving a little to garnish top. Sprinkle onion and cheese over sausage. Mix eggs, cream, salt, pepper, parsley and sage with beaters on low. Pour over cheese.

Bake 35 - 45 minutes or until knife comes out clean.

Serve with fresh fruit!
