Breakfast Pizza

One of my co-workers, Tim brings these egg pizza’s to our work pot lucks. You need to get into the lunchroom quickly, this goes fast. It is a bit different from most brunch dishes, but is wonderfully versatile.

ingredients

  • 1 package of refrigerator crescent rolls
  • 1 lb of frozen hash browns defrosted, I use the microwave.
  • 12 oz sausage (I use Jimmy Dean Pork sausage, but you can use Italian sausage or a good chicken sausage) browned and drained. You can also use sliced ham, or Canadian bacon, or cooked bacon as well.
  • 1/2 c thinly sliced onion
  • 1/2 cup thinly sliced green peppers
  • 3 beaten eggs
  • 3 to 4 cups of shredded cheese.

    Preheat the oven to 400°. Line a cookie sheet or jelly roll pan with aluminum foil. Brush with olive oil. Spread the crescent rolls in 1 large rectangle. Make sure that the seams are pinched together.Dock with a fork. Bake for 10 minutes.

    Evenly layer the remaining ingredients as follows: Hash browns, sausage, and vegetables. Pour the beaten eggs evenly over the veggies. Spread the cheese over the pizza. Bake for 15 to 20 minutes more,until the eggs are set. Remove from the oven and cover lightly with foil for about 5 minutes, then slice and serve.

You can use any combination of vegetables to make up to 1 1/2 cups. Or they can be omitted entirely.
