Margarita Flank Steak
ingredients
- 1 cup red onion chopped
- 1 tsp garlic minced
- 2 cans black beans
- 1/2 cup chicken broth
- 1/2 cup goat cheese crumbled
- 8 flour tortillas 6 inch
- 1 cup Monterrey jack cheese shredded
- 1/4 lime juice
- 1/4 orange juice
- 1/4 tequila
- 1/4 brown sugar
- 1 tsp salt
- 1 flank steak trimmed

Preheat oven 425 - Preheat grill

Combine citrus juices, tequila, sugar and salt in a large baggie, add steak and marinate 1-15 mins.

Remove from marinade and grill to desired doneness.

Transfer to cutting board and rest 5 mins. before thinly slicing against the grain.

Saute onion in oil on a large skillet until onion softens.

Add garlic, cook 1 min., Stir in beans, Crush with a potato masher until chunky.

Add broth, bring to a simmer and reduce until liquid is nearly evaporated.

Stir in goat cheese until melted, 2-3 mins.

Fill each tortilla with 1/3 cup bean mixture, roll to enclose, then place in a baking dish that has been sprayed with non-stick cooking spray.

Top with jack cheese and Bake until it melts and tortillas begin to brown.

To serve spoon guacamole on plates, top with enchiladas, add salsa and then steak slices.
