Mexican Bean Salad
ingredients
- 1 can kidney beans, drained & rinsed
- 2 cans black beans, drained & rinsed
- 1 can whole kernel sweet corn, drained
- 1 1/2 cups cherry tomatoes, cut in half
- 1 cup chopped green bell pepper,
- I cup chopped red bell pepper
- 1/2 cup sliced green onions
- 1/4 cup chopped fresh cilantro
- Dressing: 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 2 Tb lime juice
- 2 Tb white sugar
- 1 Tb salt
- 1/2 tsp. cumin
- 1/2 tsp black pepper
directions
Mix salad ingredients and dressing. Cover & refrigerate at least 4 hours.
