Vodka Dill Pickled Green Beans

The crunchy snack that bites back!

ingredients

  • 2 lbs green beans
  • 1 c white vinegar
  • 1 c cider vinegar
  • 1/2 c Vodka
  • 1/2 c water
  • 2 tbsp each:
  • red pepper
  • pickling salt
  • mustard seed
  • celery seed
  • peppercorns
  • fennel seed
  • crushed bay leaf
  • Per each quart jar:
  • 2-3 bunches of dill
  • 4 cloves of garlic

directions

Blanch beans in 6 quarts of boiling water (approximately 3 minutes until bright green). Drain, put in ice water immediately. Boil liquid and spices. Pack beans(upright), dill and garlic tightly in sterile, wide mouth, quart jars. Pour boiling mixture over beans. Seal tightly and turn upside down to cool. Then refrigerate for e days.

Makes an excellent garnish for a Bloody Mary or martini.
