Greek Orzo with Shrimp Salad
a taste of summer
ingredients
- Dressing:
- 1/4 c. + 2 Tbsp. packed fresh dill
- 1 1/2 garlic cloves
- 3 Tbsp. olive oil
- 3 Tbsp. fresh lemon juice
- 1 1/2 Tbsp. red wine vinegar
- Salt and pepper to taste
- Salad:
- 1 lb. large peeled cooked shrimp
- 3/4 c. orzo – cooked, rinsed, drained, tossed with olive oil and chilled
- 3 1/2 oz. crumbled feta cheese
- 1 large ripe tomato – peeled, seeded and diced
- 12 Kalamata olives
- 2 green onions, sliced

Prepare orzo.

Peel and cook shrimp.

Blend dressing ingredients together in blender or food processor.

Combine dressing and salad.

Can be prepared 3 hours ahead.
