ingredients

  • Dressing:
  • 1/4 c. + 2 Tbsp. packed fresh dill
  • 1 1/2 garlic cloves
  • 3 Tbsp. olive oil
  • 3 Tbsp. fresh lemon juice
  • 1 1/2 Tbsp. red wine vinegar
  • Salt and pepper to taste
  • Salad:
  • 1 lb. large peeled cooked shrimp
  • 3/4 c. orzo – cooked, rinsed, drained, tossed with olive oil and chilled
  • 3 1/2 oz. crumbled feta cheese
  • 1 large ripe tomato – peeled, seeded and diced
  • 12 Kalamata olives
  • 2 green onions, sliced

    Prepare orzo.

    Peel and cook shrimp.

  • 3

    Blend dressing ingredients together in blender or food processor.

  • 4

    Combine dressing and salad.
