Chicken Flautas
ingredients
- 1 1/2 lb. boneless, skinless chicken breast
- Ranch dressing (enough to coat chicken breasts)
- 2/3 c. Pace Thick and Chunky salsa
- 3/4 tsp. ground cumin
- 12 Flour tortillas
- 8 oz. shredded cheddar cheese
- Vegetable oil
- Topping options: Sour cream, guacamole, lettuce tomatoes, etc.
directions
Put chicken in crockpot and cover with Ranch dressing. Cook on low for 6-8 hours. Shred chicken. Combine chicken salsa, and cumin. Heat 1/2" oil in skillet until hot. Quickly fry each tortilla in oil until soft (about 2 min. on each side. Spoon chicken mixture into middle of soften tortillas and cover with cheese. Roll tightly and put on cookie sheet or in shallow baking dish seam side down. Bake 18 – 20 minutes or until crisp.
