Tali's Black Bean Salad

ingredients

  • Dressing:
  • 1 Small Garlic Clove
  • 2 Teaspoons Salt
  • Juice of 1 1/2 Limes (3 Tablespoons)
  • 2 Teaspoons Kosher Salt
  • 1/4 Teaspoon Chili Powder
  • 1/4 Cup Extra-Virgin Olive Oil
  • Salad:
  • 1 Cup Canned Corn
  • 1 Orange Bell Pepper, Diced
  • 1/2 Small Red Onion, Finely Chopped
  • 1 Tablespoon Extra-Virgin Olive Oil
  • 1 15 Oz. Can Black Beans, drained and rinsed
  • Kosher Salt
  • Fresh Ground Black Pepper
  • 1 Cup Cherry Tomatoes, Halved
  • 1 Avocado, Seeded and Diced
  • 1/4 Cup Fresh Cilantro, Chopped with leaves and stems

    Smash garlic clove, sprinkle with pinch of salt and mash and smear to a coarse paste.

    Whisk the garlic paste, lime juice, salt and chili powder together in bowl.

  • 3

    Gradually whisk in the olive oil, starting with a few drops and then in a steady stream.

  • 4

    Combine all salad ingredients and toss with dressing.
