Macadamia Nut Crusted Fish
You can use any white, flaky fish that is fresh. I like to use red snapper, mahi mahi or grouper.
ingredients
- 4 6oz portions of mahi mahi
- salt and pepper
- 1/2 cup all-purpose flour
- 2 eggs
- 1 cup panko breadcrumbs
- 1/2 cup chopped macadamia nuts
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- juice of 1/2 lemon
- 1 tablespoon chopped fresh parsley

Sprinkle the fish with a little salt and pepper on both sides.

Prepare a breading station. Put the flour in the first bowl. In the second bowl beat the eggs with a little bit of water to make an egg wash. In the third bowl combine the breadcrumbs with the nuts. First coat the fish with flour shaking off any excess. Second dip the fish in the egg to coat. Third, roll the fish in the breadcrumb and nut mix. Do this for all of the portions.

In a large saute pan heat the olive oil and butter together over medium heat until the butter is melted and bubbly. Saute the fish until browned on each side and the fish is cooked through, about 10 minutes total. Sprinkle the parsley and lemon juice over the fish and serve.
