Creole Shrimp

ingredients
- 1 c. sliced onion
- 1/2 c. diced celery
- 1 clove minced garlic
- 3 T butter
- 1 T flour
- 1 tsp. salt
- 1 tsp. sugar
- 2 - 3 tsp. chili powder
- 1 C. water
- 1 15 oz.can tomatoes
- 2 c. shrimp, cooked
- Rice

Cook celery, onions, and garlic in butter about 10 min.

Add combined flour, salt, sugar, and chili powder mixed with 1/4 c water.

Add remaining water and tomatoes and simmer 15 minutes.

Meanwhile, cook rice and keep hot.

Add shrimp to cooked tomato mixture, heat, and serve over rice.

My sister, Ruth, makes this and I loved it so much, she gave me the recipe. For a variation, substitute chicken for the shrimp. It is yummy, too.
