Fattigmans - Bakelser
These are a fried dough cookie that are from Grand-mom Josie. She would often make these at Christmas time and the recipe I am copying from is in her hand.
ingredients
- 12 egg yolks
- 6 egg whites
- 1 tsp. cardamom seed
- wine glass full fruit juice (peach, apricot or brandy)
- 12 tbs. cream
- 12 tbs. melted butter
- 12 tbs. sugar
- flour
directions
Beat egg whites-then egg yolks. Combine and add sugar. Add butter, cream, cardamom, fruit juice. Add just enough flour so mixture will leave the hands. Too much will toughen mixture. When thoroughly mixed, place in a cool place overnight.

Roll as thin as possible without adding flour. Cut in diamond shaped and cut slit in middle with knife.

Pull one corner through split. Fry in deep fat until a light brown.

Drain on toweling (paper lm) and then sift powdered sugar over all.
