Mustard Marinated Sirloin
A company favorite!
ingredients
- 2 tbps. Dijon mustard
- 2 tbsps. Burgundy or other dry red wine
- 1 tsp. coarsely ground pepper
- 2 cloves garlic minced
- 1 lb. lean, boneless sirloin steak, trimmed
- Vegetable cooking spray
- 1 C sliced fresh mushrooms
- 1 1/2 tbsps. flour
- 1 C beef broth
- 1/2 C burgundy or other dry red wine
- 1/4 tsp. salt
- 1/4 tsp. pepper

1. Combine Dijon mustard, Burgundy, pepper, and 2 cloves garlic. Coat steak on both sides with mustard mixture, and place in a shallow dish. cover and refrigerate 8 hours.

2. Place steak on a rack coated with cooking spray; place rack in broiler pan. (Steak can also be grilled!) Broil 4 inches from heat (with electric oven door partially open) 4-5 minutes on each side or until desired degree of doneness. Let stand 5 minutes. Thinly slice steak across grain; keep warm.

3. Coat a nonstick skillet with cooking spray; add mushrooms, and cook, stirring constantly, over medium heat until tender. add flour; cook 1 minute, stirring constantly. Gradually add beef broth and 1/2 cup Burgundy; cook, stirring constantly, until thickened. Stir in salt and pepper. Serve evenly over meat.
