Parmesan Stuffed Tomatoes
Yummy tomatoes stuffed with buttery, flavorful stuffing.
ingredients
- 1/2 cup breadcrumbs
- 1/2 cup parmesan cheese
- 3 tablespoons parsley, chopped
- 2 tablespoons chives, chopped
- 1 teaspoon dried tarragon
- 1 teaspoon pepper
- 1/4 cup onion, finely chopped
- 4 medium sized tomatoes
- 4 oz. butter, melted
directions
Combine bread crumbs with parmesan, parsley, chives, tarragon, and pepper. Mix onion seasoned breadcrumbs, and melted butter together. Cut tomatoes in half (horizontally) and seed them. Fill with breadcrumbs and bake in buttered baking dish for ten minutes in 350 degree oven.
notes
Starting with room temperature tomatoes reduces cooking time and helps assure a firm tomato.
