New Potato and Green Bean Salad

Fresh on the heels of a visit to the Minneapolis Farmers Market...

ingredients

  • 2 lbs of new potatoes, boiled and cubed
  • 1 lbs of fresh green beans, steamed and cut in half
  • 4 stalks of celery, sliced thin
  • 1/4 C capers, drained, reserve 2 T juice for dressing
  • 2 cloves garlic
  • 1/2 C olive oil
  • 1/8 C dijon mustard
  • juice from 1/2 lemon
  • 2 tbsp fresh dill
  • Salt and freshly ground pepper

    boil potatoes until just tender, cool, peel and cube

  • 2

    steam green beans until al dente

  • 3

    refresh under cold water

  • 4

    slice celery

  • 5

    drain capers reserving liquid for dressing

  • 6

    crush garlic,

    Prepare and place in a large bowl.

  • 8

    Whisk dijon, olive oil, lemon juice, reserved juice from capers, lemon juice, to make dressing.

    Add fresh dill, salt and pepper to taste.

  • 10

    Toss with potato and green bean mixture, chill and serve.
