New Potato and Green Bean Salad
Fresh on the heels of a visit to the Minneapolis Farmers Market...
ingredients
- 2 lbs of new potatoes, boiled and cubed
- 1 lbs of fresh green beans, steamed and cut in half
- 4 stalks of celery, sliced thin
- 1/4 C capers, drained, reserve 2 T juice for dressing
- 2 cloves garlic
- 1/2 C olive oil
- 1/8 C dijon mustard
- juice from 1/2 lemon
- 2 tbsp fresh dill
- Salt and freshly ground pepper
directions

boil potatoes until just tender, cool, peel and cube

steam green beans until al dente
- 3
refresh under cold water

slice celery
- 5
drain capers reserving liquid for dressing

crush garlic,

Prepare and place in a large bowl.

Whisk dijon, olive oil, lemon juice, reserved juice from capers, lemon juice, to make dressing.

Add fresh dill, salt and pepper to taste.

Toss with potato and green bean mixture, chill and serve.
