Pumpkin Pecan Pie
ingredients
- 4 eggs
- 3/4 cup dark brown sugar
- 1/4 cup dark corn syrup
- 1/2 cup sugar
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 cup whipped cream
- 1 1/2 cup pumpkin puree
- 1/2 cup chopped pecans
- 1 pie crust

Roll out pie dough in a pie pan & chill for 10 min.

Preheat oven to 400. Combine eggs, brown sugar, & corn syrup in a large bowl, & whisk until blended. Stir in white sugar & next 3 ingredients. Add cream pumpkin puree & chopped pecans, stir to blend. Pour mixture into pie crust. bake on lower rack for 30 or until filling sets around the edges & loose in the center. Shield pie with foil after 30 min. Then cook additional 35 min. Let cool completely before slicing
