Enchiladas Suisas
ingredients
- 2 T butter
- 2/3 cup onion, chopped
- 2 T flour
- 1 1/2 cups chicken broth
- 1 cup green chile peppers
- 1 clove garlic, minced
- 3/4 tsp salt
- 1 dash cumin
- 1 cup shredded monterey jack cheese
- 1 cup shredded cheddar cheese
- 12 (8 inch) corn tortillas
- canola oil for frying
- 2 cups shredded cooked chicken breast
- 1 cup heavy cream
- 1/4 cup chopped green onions
- 1/2 cup slivered green olives
- 1 pint cherry tomatoes

Preheat oven to 350.

Make salsa verde: Melt butter in a skillet over medium heat & saute onion until soft. Stir in flour. add broth, the chiles, garlic, salt & cumin. Simmer 15 min, then set aside.

Combine cheeses, reserving 1/2 cup for topping. In skillet, over medium heat, heat 1 inch canola oil & fry tortillas one at a time. Dip both sides in the salsa , then place chicken & cheese in the middle & roll placing them seam side down.

After all tortillas have been rolled, spoon remaining salsa over tortillas and cover evenly with cream. Sprinkle with cheese & onions.

Bake, uncovered, for 20 min or until cheese is melted & beginning to brown. Garnish with onions & tomatoes.
