Sticky Chicken
The sauce looks finicky, but you can omit ingredients easily and still have a yummy sauce. The BBQ sauce, soy sauce & honey are key then use what you have for the rest.
ingredients
- 16 chicken thighs (or less than and have LOTS of sauce – yummy)
- 1/2 cup barbecue sauce
- 1/4 cup soy sauce
- 1/4 cup red wine vinegar
- 1/4 cup liquid honey or maple syrup
- 1 tbsp chili powder
- 1 tbsp Dijon (or other type) mustard
- 1 tbsp grated gingerroot (or dried ground)
- 2 tsp minced garlic (or dried ground)
- 1 tsp cumin
- 1 tbsp cornstarch
- 1 tbsp water

Preheat oven to 400 degrees. Spray a 9x13” baking dish (or smaller for fewer thighs) and arrange thighs in a single layer.

Whisk together all sauce ingredients in a medium bowl. Pour over chicken turning chicken to coat.

Bake uncovered for 40 minutes.

Remove chicken from pan and pour the sauce into a pot. Bring the sauce to a boil over medium-high heat. Combine cornstarch & water until smooth and mix into the sauce. Cook 1 minute until bubbly. Serve over chicken.
