dreamy creamy spinach
ingredients
- 1 1/2 (16 oz) bags of cut spinach, frozen
- 2 tbsp salted butter
- 3 - 4 cloves garlic
- dash nutmeg
- 2 tbsp flour
- 1 C organic heavy cream

Place spinach in a microwave-able bowl. Defrost in the microwave until there are no frozen bits. Place in a colander in the sink. Press out as much water as you can. Press with paper towels, fluff with a fork, press, fluff, press, fluff. Let “dry” for a few minutes.

In a saucepan, melt butter. Sauté garlic with a dash or two of ground nutmeg for a minute. Add flour and cook over moderate heat, stirring for 1 minute. Stir in cream and simmer, stirring constantly, 2 minutes (mixture will be thick). Stir spinach into sauce and season with salt and pepper. Add more cream if it’s too thick and heat through. Serve.
