Fresh Corn and Avocado Salad
yummy and simple fresh salad we had last night with macadamia nut and parmesan encrusted halibut and steamed sticky rice
ingredients
- 6 ears corn
- 2 cups halved cherry tomatoes
- 1/2 cup thinly sliced red onion
- 1 large avocado, cubed
- 1/3 cup chopped basil
- 2 tbsp. champagne vinegar
- 1 tsp dijon mustard
- 1/4 cup extra-virgin olive oil
- 1/4 tsp. each salt and pepper
directions

cook corn and rinse in cold water

combine tomatoes, onion, avocado, and basil in a large bowl

combine vinegar, mustard, salt and pepper to make vinaigrette, whisking until blended

cut kernels off cobb
- 5
add to salad
- 6
toss with vinaigrette
