obama meatloaf
Scott and I made this on Election Night 2008.
ingredients
- for meatloaf:
- 1 C seasoned breadcrumbs
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1 tsp chili powder
- 1 tsp dried thyme (or tktk t fresh)
- 1/2 onion, finely chopped
- 1 carrot, peeled and finely chopped
- 4 cloves of garlic, minced
- 1/2 red bell pepper, finely chopped
- 2 lbs ground meat - some combination of beef chuck, beef sirlon, pork and/or veal with varying degrees of fattiness
- 1 1/2 tsp salt
- 1 egg, lightly beaten
- for glaze:
- 1/2 C ketchup
- 1 tsp ground cumin
- dash Worcestershire sauce
- dash Tabasco
- 1 tbsp honey

Heat oven to 325.

Combine breadcrumbs, pepper, cayenne, chili powder and thyme. Add onion, carrots, garlic and red pepper to breadcrumb mixture. Toss to combine. Add meat mixture, using your hands to combine. Add egg and combine thoroughly, but don’t overhandle. Pack the mixture into a 10 inch loaf pan to mold the shape of the meatloaf. Turn out onto a parchment or foil-lined baking sheet. Cook until a meat thermometer inserted into the center reads 155 degrees. Brush glaze onto loaf after it’s cooked for 10 minutes. Let rest for 10 minutes before slicing to serve.
