Grandma Farner's bread pudding
LOOKS GOOD ENOUGH TO EAT
ingredients
- 4 - 5 slices bread ,cubed
- 2Tbsp.butter
- 3 C scalded milk
- 1 whole egg
- 2 eggs separated
- 1/4 - 1/2 C sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1 tsp lemon extract
- 1 tsp grated lemon rine
- 1 C coconut (optioal)
- raisins (about a handful)
- jam or preserves

Combine butter with milk and soak

bread cubes in this mixture for 5 min.

Separate eggs and beat the yolks and the whole egg with sugar.If you use the coconut use 1/4 cup sugar,if not use 1/2 cup sugar. Gradually add bread and milk mixture.Add salt,vanilla, lemon extract,and lemon rine and raisins and coconut(if using).Pour into 1 1/2 guart casserole.Bake at 375 degrees for 45 min. to one hour,until knife comes out clean.

When the pudding has cooled spread a thin layer of jam over the top.Make a meringue from the reserved two egg whites,1/4 cup sugar,1 tsp lemon extract.

Pile lightly over pudding and brown in hot oven.Serve warm or cool.
