Apricot (or Peach) Bars

ingredients

  • 3/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 2 cups flour
  • 1/4 tsp baking powder
  • 1 1/3 cup coconut flakes (optional)
  • 1/2 cup chopped walnuts
  • 1 jar (12 ounces) apricot (or peach) preserves

    In a large bowl, cream butter and sugar. Add the egg and vanilla, mix well. In another bowl combine flour and baking powder. Gradually add to creamed mixture. Add coconut and walnuts, mix thoroughly.

    Press 2/3 of dough into a greased 13 x 9 x 2 pan. Spread with preserves, crumble remaining dough over preserves. Bake at 350° for 30-35 minutes until golden brown. Cool in pan on wire rack. Cut into bars. Makes 3 dozen.
