Tuna Cakes
ingredients
- 2 cans (6 oz) tuna in water
- 2 eggs
- 1/3 c cracker crumbs or bread crumbs
- 1/4 c chopped green onion
- 2 tsp Dijon mustard
- 1 tsp prepared horseradish
- 1/4 tsp salt
- 1/4 tsp pepper

Combine all ingredients together. Shape into 6 cakes about 2 1/2" in diameter.

Heat a large skillet with oil to coat bottom over medium heat. Cook the tuna cakes for 6-8 minutes or until golden brown on both sides, turning once.
notes
Great to use in tuna melts. Top bagel, bun or bread with tuna cake, a tomato slice and cheddar cheese. Broil until cheese is melted.
