Oven-Roasted Vegetables
Discovered in the dark days of South Beach Phase I, this is a healthy recipe that is also very good.
ingredients
- 1 medium zucchini
- 1 medium red bell pepper
- 1 medium yellow bell pepper
- 1 lb fresh asparagus
- 1 red onion
- 3 Tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp freshly-ground black pepper
directions
Chop all vegetables into bite-size chunks. Heat oven to 450 degrees F. Place the vegetables in a large roasting pan and toss with olive oil, salt, and pepper. Spread in a single layer in the pan. Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.
