GREEK STYLE VEAL SHANKS ( SLOW COOKER )
Works in slow cooker from 3 1/2 to 6 quarts. Can use veal and some beef shanks. May prepare the day before.
ingredients
- 6 veal shanks (ea. about 8 oz.)
- 1/3 cup all-purpose flour
- 2 tbs. olive oil, divided
- 3 leeks, white part only, cleaned and thinly sliced
- 12 cloves garlic, slivered
- 2 tsp. dried oregano leaves, crumbled
- 1/2 tsp.cracked black peppercorns
- 1 cup dry white wine
- 3 tbs. tomato paste
- 2 cups chicken stock
- Salt optional

On a plate, coat shanks with flour, shaking off excess.

In skillet, heat 1 tbsp.of the oil over med.-hi heat. Add shanks, in batches, and cook stirring, adding more oil as necessary, until lightly browned on all sides, about 5 min. per batch.

Transfer to slow cooker.

Reduce heat to medium. Add leeks and cook, stirring, till softened, about 5 min.

Add garlic, oregano and peppercorns and cook, stirring, for 1 minute.

Add wine, tomato paste , chicken stock, stirring, and bring to a boil.

Add salt to taste if using.

Transfer to slow cooker.

Cover and cook on Low for 12 hours or on Hi for 6 hours.
