Potato Casserole
ingredients
- 2 1/2 lb. potatoes
- 16 oz. Velveeta cheese, crumbled
- 1 large onion, chopped
- 1/2 lb. bacon, fried and crumbled
- 1/2 cup mayonnaise
directions
Peel, quarter and boil potatoes until tender; then drain and cube. Mix all ingredients in a 9x13" casserole dish. Bake for 1 hour at 325 degrees.
notes
Store apples with potatoes (use 1 part apple to 4 parts potatoes). This will keep potatoes from sprouting. New potatoes should be added to boiling water for cooking. Old potatoes should be added to cold water and be brought to a boil.
