Jo's Chinese Chicken Salad
From my best friend’s mom, Jo, who made this for her bridal shower.
ingredients
- 3 chicken breast halves
- 2 slices fresh ginger root
- 1 med. head lettuce, shredded
- 1/2 bunch cilantro, chopped
- 4 oz. rice sticks
- 1/2 c. toasted sliced almonds
- 1/4 c. toasted sesame seeds
- 2 green onions, finely sliced
- Dressing:
- 4 T. sugar
- 2-3 t. salt
- 1 t. MSG (optional)
- 4 T. white wine vinegar
- 1/2 c. salad oil

Cook chicken in water with sliced ginger until done-about 20-30 min. Fry rice sticks in hot oil (375°) in small batches. Drain on paper towels (You can cook soaked rice sticks in chicken broth for about 2 min, then drain).

Shred chicken. For dressing, mix all ingredients EXCEPT oil in a saucepan. Heat over low until dissolved. Cool and add oil just when ready to serve salad. Toss dressing with salad ingredients.
