ingredients

  • 3 lbs ground beef
  • 4 green peppers
  • 2 red peppers
  • 3 jalapeno peppers
  • 3 spanish onions
  • 1 1/2 tsp. nutmeg
  • 1 1/2 tsp cayenne pepper
  • 2 tbs salt
  • 2 tbs pepper
  • 1 tbs fresh garlic
  • 1 bay leaf
  • 12 tbs chili powder
  • 1 1/2 lbs dark red kidney beans, canned
  • 1 1/2 lbs pinto beans, canned
  • 1 1/2 lbs whole plum tomatoes, canned
  • 11 oz tomato puree
  • 4 cups tomato juice

directions

Grind 2 green peppers; 1 red pepper; 3 jalapenos and 1 1/2 onions. Chop the rest for color. Place ground beef in mixing bowl, add all peppers, onions and spices. Mix ingred. until seasoning is evenly distributed. Let mixture marinate 12 hours. Add plum tomatoes, tomato puree and tomato juice. Let mixture boil 30 minutes. Add kidney beans and pinto beans. Let simmer 30 minutes. Taste chili for seasoning (salt & pepper). After 30 minutes, reduce heat. Continue to cook 10 minutes.
